Best pizza in the world!

My absolutely favorite pizza is inspired by the baked potato pizza from Pizza Luce in Minneapolis. Thick with garlic mashed potatoes and deep with fresh veggies and bacon, it is amazing the first night and almost better for breakfast the next day. Plus, you can get everything you need at farmer's market!

First, make extra mashed potatoes for a meal the night before. I guess you could make them fresh the same day, but that's never going to happen in my world. I make mine with garlic, sour cream, and a lot of butter.

Then, make a batch of your favorite pizza crust, or pick up premade dough. Pour about two tablespoons of oil on to a 9x13 jelly roll pan (cookie sheet with sides) and give it a good smear around. If you're feeling fancy sprinkle some corn meal over the oil for extra crunch. Gently stretch the dough to roughly fit the pan, then set it aside to rest. If it gives you a hard time let it sit ten or fifteen minutes and come back to it. Turn your oven on to preheat at 350.

While your dough is resting fry up some beef bacon, drain, and rough chop. I usually fry a whole pound, eat a few slices, and dump the rest on my pizza.

Chop a red or yellow onion, a tomato or two, a head of broccoli, and some extra garlic.

Grab your crust, dump the potatoes on to the crust and mush them around some. It's easier if you work by the big spoonful and if they're not straight from the fridge. Then I usually sprinkle about three cloves of minced garlic over the potatoes. No vampires in our house!

Dump all your veggies on there too, and then a few cups of shredded cheese (preferably cheddar or colby jack).

Pop it in the oven until the crust is golden brown and the cheese is all melted, about 35 minutes. We use a cooler oven for a longer time so the whole shebang gets done.

2 T. Olive oil

3 cups or so garlic mashed potatoes

1 pound beef bacon, cooked and chopped

2 heads broccoli, chopped

1 red or yellow onion, chopped

3 cups or so garlic mashed potatoes

2 tomatoes, chopped

3 T. minced garlic

4 cups of shredded cheese, not mozzarella

350 oven for 30 minutes
